Chateaubriand for Two Print Email

olive oil
2 cloves garlic, crushed
1/4 tsp sea salt
1/4 tsp black pepper
1 pound beef tenderloin roast, center cut
bacon slices (optional)

Preheat oven to 350 degrees. Combine olive oil with garlic, sea salt and black pepper and then rub over tenderloin roast. Place on a roasting pan with low sides and cover with bacon.

Roast at 350 degrees to desired internal temperature (or grill with indirect heat), about 30 minutes. Remove, cover with foil or parchment paper and rest for 5 minutes. Slice and serve with lobster tails with garlic / herb butter or Bearnaise sauce.
