Pan Seared Salmon With Riesling Honey Mustard Print Email

4 Salmon Fillets (each 6 oz/170 g)
salt and pepper
1/2 tsp vegetable oil

Mustard Glaze
1 oz Riesling wine
juice of 1/2 lemon
1 TBS honey
1 TBS grainy mustard
1 tsp oyster sauce
1 tsp mirin
1 tsp sesame oil

Season salmon fillets with salt and pepper. Preheat large non-stick skillet and coat with 1/2 tsp. vegetable oil. Place salmon flesh side down and sear for 1 minute to golden brown. Turn fillets over, reduce to medium heat and cook 5 to 8 minutes more for medium doneness. During final minutes of cooking, drizzle with a mixture of 1 oz white wine, juice of 1/2 lemon, 1 tbsp. honey, and 1 tbsp. grainy mustard. serves 4
