Poached Salmon

6 oz Salmon
Skinless, Boneless Fillets
Court Bouillon
1 medium onion, sliced
1 large carrot, sliced
1 lemon, sliced
a pot of water

Add onion, carrot and lemon slices to a pot of boiling water. Reduce heat and simmer for 5 minutes. Drop in fillets one at a time. Each 6 oz fillet will cook in 7 to 8 minutes. Serve with your favorite vegetables and salad.
