Wine Poached Salmon Print Email

4 fresh 6 oz salmon fillets
1/2 cup dry white wine
4 thin slices of onion
2 thin slices of lemon
1/4 tsp. dill seeds
1/4 tsp. rosemary
1 tsp. salt
freshly ground pepper

Pour wine into pan; add onion, lemon, dill, rosemary, salt and pepper with enough water to cover fish. Bring to a boil, then add salmon. Simmer, covered for 10-15 min. or until done. Lift fish to platter and remove skin (if required), reserving liquid. Top with sauce.

Wine Sauce
2 TBS butter; 2 TBS flour; 1 cup reserved liquid; 1/2 tsp. salt; 1/8 tsp pepper
Melt butter in saucepan, add flour and gradually add liquid. Cook until thickened. Add salt and pepper.

Serves 4
