Cedar Planked Tomatoes with Fresh Mozzarella & Basil Print Email


4 large ripe tomatoes
4 oz. fresh Mozzarella, sliced
4 large basil leaves
salt and pepper
one cedar plank, soaked

Slice tops of tomatoes off to create a level surface. Sprinkle with salt and pepper. Drizzle tomatoes with olive oil if desired. Heat grill to 350 or 400 degrees and place soaked plank directly onto grill grates. Close lid and allow plank heat for 3 minutes. Open lid, flip plank and continue to heat for 3 more minutes until a light smoke develops. Place tomatoes, cut side up, directly onto plank, and close lid. Do not turn tomatoes. Allow to cook for 5-10 minutes or until they begin to soften. Open grill lid, top each tomato with basil leaf and cheese slices, and close lid. Cook 5 more minutes or until cheese melts and tomatoes are tender, but not mushy. Remove from grill and serve as a side dish or over a bed of mixed greens for a wonderful salad.
