Warm Tomato and Basil Bruschetta Print Email

2 containers ripe grape tomatoes
½ cup fresh basil, chopped
2 cloves fresh garlic, minced
2 ½ Tbsp. balsamic vinegar
2 TBS capers
Salt and pepper to taste
1 French baguette or two demi baguettes, cut into thin slices and slightly toasted
Crumbled feta or fresh mozzarella cheese
1 15" cedar plank, soaked

Heat grill to approx. 350 degrees and place soaked plank(s) on hot grill grates. Close lid and allow plank to smoke, 3-5 minutes. Spread whole tomatoes on hot plank, close lid, and allow to cook for approx. 10 minutes. If all tomatoes will not fit on one plank, simply cook 1 container until done, remove, and add the second container. Tomatoes will be done when they are hot, blistered, and begin splitting. Remove tomatoes from plank and place in a medium bowl. Add basil, garlic, vinegar, capers, and salt and pepper and toss. Spoon tomato mixture onto each baguette slice, top with desired cheese and serve.
