1 whole tenderloin
olive oil
Tony's Prime Rib Seasoning, or Canadian Steak Spice

Ask for your tenderloin trimmed of silver skin, but not the fat at the bottom of the tenderloin, and tied into a roast of even thickness (no fat). Remove from refrigerator and rest for 60-90 minutes at room temperature. Dab roast dry with paper towels, brush with olive oil, and season with our Prime Rib and Tenderloin, or Canadian Steak Spice. Roast on a rack at 325 degrees (uncovered, in the top of the oven), remove from oven at 115-120 degrees internal, cover and rest for 10 minutes (about medium rare). Slice and serve with one of Tony's Chef Sauces.
