Salmon Filets with Honey Mustard Glaze Print Email

This is quick, healthy and delicious - easy enough for a weeknight, tasty enough for a special occasion. Serves 4

1 tablespoon butter, melted
2 tablespoons orange juice
1-1/2 tablespoons honey
1 teaspoon Dijon mustard
1 teaspoon dried tarragon
Salt and pepper to taste
2 tablespoons olive oil
4 salmon fillets, about 6 ounces each

Preheat oven to 450 F. Mix the first 6 ingredients together in a small bowl. (If the butter congeals, microwave just until remelted.) Heat the olive oil in a large skillet over medium-high heat. Add the salmon fillets, skin side down. Sear for 3-4 minutes. Brush the top of the fillets with the glaze. Place in the top half of the oven and roast until done, about 5 minutes. If desired, place under the broiler to lightly brown. Serve immediately, spooning extra heated glaze over top if desired.
