Pan Crusted Sablefish w/ Greens Print Email

Brown and crusty on the outside, moist and juicy inside; this dish is amazingly flexible and works with almost any ethnic style.

Season skinless Sablefish loins, steaks, or roasts with salt and white pepper, your favorite blend.

Preheat oven to 400 degrees. Preheat a heavy skillet (preferably cast iron or stick-free) over a medium high flame. Mist lightly with oil and add sablefish. Cook without moving until the first side is lightly browned. Carefully turn fish over with a spatula, and place in top of preheated oven, roasting until the second side is browned - about 10 minutes. Carefully remove from pan and place directly on top of mixed greens and sprinkle with your favorite vinegar or verjus.
