Barramundi with Apples & Lime Butter Print Email

Four, 10-12 oz Barramundi fillets
Juice of 2 limes or lemons

scant 2/3 cups butter, small cubes
1/3 cup Dry white wine
1 TBS Soy sauce
1 Apple, sliced
6 green onions

Place fillets on a greased tray and broil on each side until just cooked, keep warm.

In a steel skillet, bring limejuice, soy sauce and wine to a boil and reduce by half. Remove pan from stove and whisk in the cubes of butter, one at a time, to thicken and richen the sauce.

Meanwhile, slice apple and slice green onions into thin strips and sauté quickly in butter in another frying pan. Place apples and onions in the center of four plates, topping with the fish fillet and finishing with the sauce.
