Green Chile Quiche Print Email

A simple dish like this is only as good ad the ingredients you put in! I strongly suggest the natural organically raised eggs and milk from Fort Collins' Morning Fresh, our locally cured and smoked bacon and Musso's Fire Roasted local chiles - all available at Tony's.

6 slices Tony's Applewood Smoked or Pepper bacon
1/2 cup chopped onion
1 cup green chiles, chopped
4 eggs, beaten
1 cup half & half
1 cup milk
1 TBS flour
1/2 tsp ea: salt, oregano, cumin
1/4 tsp black pepper
1 cup shredded sharp cheddar
1 deep-dish piecrust, prepared

Preheat oven to 325 degrees. Cook bacon, chop and reserve. Drain all but 1-2 tablespoons of the drippings. Add onion, and cook until tender.

Stir together beaten eggs, half & half, milk, flour and seasonings. Stir in bacon, onion, green chiles and cheese; mix well. Pour into a prepared piecrust and bake in a 325-degree oven for 45 to 50 minutes or until knife inserted in center comes out clean. Let rest 10 minutes before serving.
