Tony's Turkey Corn Chili Print Email

1 TBS 80/20 blend oil
1 onion, chopped
Half red pepper
Half green pepper
1 jalapeno pepper, seeded & chopped
1 bay leaf spice
1.5 lbs turkey meat, cooked & diced
1.5 TBS chili powder (dark)
1.5 TBS ground cumin seed
1 tsp tabasco sauce
2 cup corn kernel (sweet, frozen or fresh)
32 oz tomatoes, crushed
16 oz chicken stock
2 green onions, chopped

Heat a deep pot over medium heat, add oil.
Add onions, peppers and jalapenos.
Add bay leaf and cook vegetables for about 5 minutes.
Add diced turkey and dry seasoning and simmer.
Add corn and tomatoes and simmer for 5-7 minutes.
Add tabasco and check the seasoning (salt & pepper).
Garnish with green onions.

Serves 4.
