|Tony's Cajun Turkey Quesadillas
2 red potatoes, diced
6 slices bacon, chopped
2 onion chopped
2 oz 80/20 blend oil
2 cup turkey meat, cooked and chopped
1 cup Gruyere cheese, grated
2 TBS fresh cilantro, chopped
8 flour tortillas (10" each)
4 oz cranberry sauce
1 jalapeno pepper, seeded & chopped
Preheat Oven to 500 F.
Cut potatoes into quarters, and place in cold salted water. Cook until tender.
In a heavy skillet, cook bacon until lightly brown. Add onions and jalapenos in 1 TBS oil for approximately 5 minutes.
Cool and stir in turkey & cheese.
Brush 1 flour tortilla with oil and turn and brush the other side.
Place on the tortilla the turkey mix spread evenly. Top with another tortilla and bake in a middle oven for 8-10 minutes.
Cool slightly and cut into 4-6 piece wedges, top with cranberry sauce.
Garnish with cilantro or parsley.
