Pan Seared Salmon w/ Mango Salsa Print Email

1.75 lb salmon fillet
.25 oz Kosher salt
.8 oz 80/20 Blend oil
8 oz Mango-Lime Salsa
1 TBS citrus dill salmon rub
1 TBS Chipotle spice

Rub salmon fillet with olive oil.
Mix citrus rub & Chipotle sesoning together.
Salmon can be grilled or seared in a pan 3-5 minutes on the presentation side and 2-3 minutes on the other side.
Serve with mango salsa over the top.
Serve with rice or steamed new potatoes and a fresh vegetable in season.

Mango Salsa

3 oz 80/20 Blend Oil
10 oz mango peeled, seeded & diced
5 oz roasted red pepper peeled, seeded & diced
Half oz Jalapeno Fresh Pepper
Half oz fresh cilantro chopped
5 oz fresh lime juice

Peel, seed & dice mangos.
Roast, peel, seed & dice peppers & jalapenos.
Chop cilantro.
Mix all together.
Add lime juice and check seasoning.
