|Chile Raspberry Glazed Pork Loin
4 lbs boneless pork loin
2 TBS canola oil
3 TBS (to taste) Tony's Chile Arriba!, Harissa or Cajun seasoning
10 oz Tony's raspberry jam
3-4 TBS hot sauce - to taste
Rub pork loin with oil and season to taste with your favorite spicy seasoning rub.
Roast in a 350° oven or indirect grill, cooking to 150° internal (about 75 minutes) - brushing with glaze several times during the last 20 minutes or so of roasting. Rest 5-10 minutes, slice thin and serve with additional glaze.
Heat jam in saucepan, adding hot sauce and additional seasoning to taste.
