|Alaska Cod Amandine
6 oz Alaska Cod Fillets
1 oz flour
1 tsp salt
½ tsp pepper
1 oz clarified butter (ghee - in the dairy case)*
½ oz onion minced
1 clove garlic, minced
1 oz slivered almonds
1 oz water
half oz butter
Dredge fish w/ flour, salt and pepper.
Heat pan to medium heat, add butter to heat.
Place fish presentation side down 1st golden brown.
Take fish out add onion, garlic and almonds to brown.
Add wine, lemon juice.
Whisk in butter check seasoning pour over fish.
Serves 2 with rice & vegetables.
