Tony's Caesar Salad Wraps Print Email

Quick Caesar Dressing
Quarter cup Mayonnaise
2 garlic cloves, minced
1 TBS parmesan grated
1 tsp anchovy paste
Half tsp fresh lemon juice
Salad rolls
8 rice paper wrappers, 8" ea
16 slices prosciutto paper, thin
4 leaves romaine lettuce, washed
1 and half cups arugula
4 oz parmesan, shaved

Whisk the 1st 4 ingredients in a small bowl to blend. Season with salt & pepper.

Melt butter in small skillet over medium heat. Add bread cubes and saute until golden brown. Add garlic toss.Turn out onto a paper towel and set aside and cool (Do ahead.)

Pour warm water into a large shallow dish and submerge 1 rice paper round until beginning to soften and place on a piece of parchment.

Top with 2 slices of prosciutto and arrange side by side covering the rice paper.

Place a leaf of lettuce on top and place the arugula on top of the lettuce.

Roll up into a tight cylinder wrap with plastic wrap and repeat.

Remove the plastic wrap and slice.

Dress the plate with dressing and fresh cracked pepper and place three sliced rolls on top and more dressing and top with croutons and garnish with shaved Parmesan cheese.
