Great with all Hawaiian fishes destined for the grill

2 TBS. Sambal (Asian Chili Sauce)
2 TBS. ginger, minced
1/4 cup garlic, minced
1/2 cup white sugar
1/2 cup Oyster Sauce
1 cup light soy sauce
1/2 cup water
1/4 cup sesame seeds
1/4 cup green onion, sliced thin
Combine all of the ingredients and mix well. Taste for seasoning, if too salty, add more water. Add steaks, pork or chicken and marinate covered for up to 24 hours. For seafood, marinate for at least 20 and up to 4 hours before cooking. - Chef David Boucher, Hyatt Regency Hotel and Spa, Kauai Hawaii
