Nuoc Cham

5 tablespoons sugar
3 tablespoons water
1/3 cup fish sauce
1/2 cup lime or lemon juice
1 large clove garlic, crushed and minced
1 + hot Thai chiles, or jalapeños, seeded and minced
1 shallot, peeled, thinly sliced, and rinsed (optional)

Whisk together the sugar, water, fish sauce, and lime juice in a bowl until the sugar is completely dissolved. Add the garlic, chile, and shallot, and let stand for 30 minutes before serving.

* Fish Sauce is a classic seasoning sauce made used in many Asian countries – it’s very important in Vietnamese cooking. If you don’t care for or do not have fish sauce, simply blend together: 1 TBS Maggi liquid seasoning, 1/2 TBS fresh lemon juice, 1 garlic clove, crushed and dried, and 1/4 green onion, finely chopped
