2 pounds Tony’s Homemade Bratwurst
6 thick slices of Gruyere Swiss cheese
1 onion
olive oil, sea salt, pepper
wheat buns
pinches of sugar and caraway
German mustard

Remove bratwurst from casings and blend together. Minced onion can be added if you like. Shape into 6 equal patties. Slice onion, brush with olive oil and season lightly with fine sea salt.

Grill patties and onions over direct medium heat. When patties are 3/4 done, top with Gruyere cheese, move to an upper rack and close lid. Meanwhile toast buns.

Rinse sauerkraut and drain; add pinches of sugar and caraway if desired. Heat in pan or microwave.
