Cajun Arctic Char / Steelhead Print Email

2 lb Arctic Char, Steelhead, or Salmon Fillets
4 TBS butter, melted, separated
Tony's Cajun Seasoning
1 TBS olive oil
juice and zest of 1 lemon

Preheat a large, heavy skillet or grill.

Brush flesh side of Arctic Char fillets with a little of the melted butter and sprinkle with seasonings.

Swirl oil in hot pan, add fillets skin side up to brown - 2-3 minutes depending on conditions.

Turn fillets and cook about 3 minutes longer to medium rare, or as desired, remove from pan and place on a warm serving platter.

Add remaining butter (or more if desired) and lemon juice to pan, swirl to heat and marry, serve drizzled over fish.
