This amazing Italian Sub highlights classic Italian ‘Salumi’ with aged cheese, all wrapped up in a dressed roll with just the right veggies.

Italian or French Demi Baguette
Extra Virgin Olive oil
Balsamic vinegar
Dry Italian herb medley
Parmigiano-Reggiano, grated (optional)
Thin slices of Mortadella, hot capocollo, and Genoa Salami
Slices of aged provolone cheese
Roasted red peppers
Fresh lettuce leaves and tomato slices
Pepperoncini peppers, cored and sliced
Black olives

Slice baguette 3/4 of the way through. Combine oil with vinegar and herbs and sprinkle evenly inside the sliced loaf (Balsamic vinaigrette can also be used). Sprinkle grated Parmigiano-Reggiano cheese inside the loaf.

Lay in meats and cheese, top with red peppers, lettuce, tomatoes and peppers – pressing into the sandwich and shaping gently. Serve with a side of olives and a vegetable soup or salad. – Chef Michaelangelo (mick) Rosacci, --
