Quiche Lorraine Print Email

8 slices of Tony’s Applewood Smoked or Peppered Bacon
1 onion, chopped
4 eggs, well beaten
1 cup half & half
1 cup milk
1 TBS all purpose flour
1/2 tsp salt
dash of nutmeg
1 1/2 cups shredded natural, aged Swiss cheese
prepared pie crust

Preheat oven to 325 degrees.
Cook 8 slices of bacon, remove, chop and reserve. Drain all but 1-2 tablespoons of the drippings. Add 1/2 to 1 chopped onion, and cook until tender.

In a bowl, whisk together eggs, half & half, milk, flour, salt and nutmeg. Stir in crumbled bacon, onion and Swiss cheese; mix well. Pour into a prepared piecrust and bake in a 325-degree oven for 45 to 50 minutes or until knife inserted in center comes out clean. Let rest 10 minutes before serving. Serves 6. – Chef Mick
