Soft Tacos with Turkey & Potato Print Email

Soft corn or flour tortillas
Leftover mashed potatoes
Leftover roast turkey, shredded or cubed
Pepperjack, cheddar or jack cheese
Tony’s Black Bean Salsa
Shredded lettuce
chopped tomatoes & cilantro leaves

Preheat a heavy grill pan or skillet over medium high heat.

Prepare ingredients; warm mashed potatoes in microwave, shred turkey and warm in microwave, grate cheese, shred lettuce and chop tomatoes.

Toast one side of a tortilla on an oiled stovetop grill or skillet. Remove and replace with a second tortilla as you assemble.

Assemble: Spread 2 TBS mashed potatoes on one half of each tortilla; top with shredded turkey, cheese and salsa and fold in half. Place on a plate and repeat with remaining tortillas.

Cover and warm in microwave, serving with the shredded lettuce, tomatoes and cilantro.
