| Salmon Steaks with Herb Butter |

Salmon in a custom herb butter blend and served with lemon – the ideal dish to savor premium fresh salmon!
4 oz butter
2 TBS mixed fresh herbs, minced
(such as parsley, dill, chervil, chives or fennel)
squeeze of fresh lemon
4, 1 inch thick salmon steaks or fillets
2 oz butter, melted
garnish: lemon wedges
Mix 4 oz butter, herbs and lemon juice in a bowl. Place on a sheet of plastic wrap and shape into a short log, twist the ends closed and place in refrigerator to harden.
Brush a baking sheet and the salmon steaks with the remaining butter, seasoning salmon with salt and pepper. Broil in oven for 4-5 minutes per side, brushing with butter as needed (times will vary). This can also be done on a cast iron grill pan. Transfer to 4 warm plates, immediately topping with herb butter pats. Garnish with lemon wedges. - Irish Food and Folklore, Clare Connery
