Mango Marinade Print Email

4 shallots
2" piece peeled ginger
1 clove garlic
2 tbsp. lime juice
1/2 tsp. ground coriander seed
1/4 tsp. salt
1/8 tsp. pepper
1/3 cup olive oil
1 medium mango, chopped

In a food processor, process garlic, shallots and ginger. Add mango and puree 30 seconds. Add lime juice, coriander seed, salt and pepper and process, adding oil in a thin stream while processor is running. Makes 2 cups. Great on chicken and pork!
