Veggie Patties w/ Balsamic Spring Greens Print Email

2 Tony’s Homemade Veggie Patties
3-4 TBS Tony's Balsamic or Italian Vinaigrette, to taste- or your favorite
2 cups Spring Greens
1/2 cup grape or cherry tomatoes, split
1-2 carrot; grated, zested or matchsticks
1/4 cucumber, sliced or seeded and cut into matchsticks
2 scallions, slivered on a bias
4 TBS toasted hazelnuts, pecans or almonds, chopped

Sauté patties in a heavy stick free skillet with olive oil (or oiled grill) over medium high heat – browning on both sides and heating through well.

Meanwhile, drizzle 2-3 TBS dressing into the bottom of a large bowl; add greens, tomatoes, carrot and cucumber. Toss gently but thoroughly with tongs. Taste and add more dressing as desired.

Scatter salad on small plates and sprinkle with scallions and nuts to taste. Top with veggie patty and serve. Great with pita bread or a rustic loaf. – Chef Mick, Tony’s Market
