| Peach Vinaigrette Salad Dressing |

1 medium peach
3 TBS extra virgin olive oil
3 TBS red wine or sherry vinegar
1/2 tsp. salt
1/4 tsp. cayenne pepper
Peel and pit one peach. Cut into chunks and place in a blender with oil, vinegar, salt, and cayenne. Whirl until smooth.
