Shrimp and Prosciutto di Parma Skewers Print Email

12 ounces shrimp (about 20), peeled and deveined
8 ounces fresh mushrooms, halved and quartered
1 sweet red bell pepper, cut in 1-inch chunks
1/4 cup olive oil
1 tablespoon minced garlic
1/2 teaspoon salt
1/8 teaspoon ground black pepper
6 thin slices Prosciutto di Parma® (about 3 ounces), cut lengthwise in thirds or quarters

Preheat broiler. In a medium bowl, combine shrimp, mushrooms, bell pepper, oil, lemon juice, garlic, salt and pepper; toss well; marinate for 15 minutes. Wrap each shrimp with a strip of Prosciutto di Parma®. Arrange on skewers with mushrooms and bell pepper chunks. Arrange on a broiler pan; brush with remaining marinade. Broil 6 inches from heat, turning occasionally, until vegetables are tender and shrimp turn pink, about 5 minutes. Serve with lemon wedges, if desired.
