Toasted Ham & Brie Crostini Print Email

So simple yet so delicious, thanks to crusty bread, smoky ham and rich cheese – complement with apple, mustard or fruit chutney.

1 fresh or day old Tony’s baguette
1 lbs premium smoked ham slices, about 1/8 inch thick
1 wedge of premium French brie or soft ripened cheese

Preheat oven to 300 degrees. Cut baguette into 3/4 inch slices and spread on a baking sheet. Place in oven as it preheats, roasting to dry slightly, remove and set aside.

Meanwhile, brown and warm ham in a heavy skillet with a drizzle or mist of oil. Remove to a cutting board and cut into the pieces about the same size as the baguette slices. Carefully cut cheese into slices of about 1 tsp each.

Place a ham slice and a cheese slice on the baguette slices and serve immediately with a variety of complements such as fresh apple slices, coarse mustard, chutney, Lingonberries or anything you fancy. – Chef Michaelangelo (mick) Rosacci, --
