Holiday Stilton Stuffed Chops Print Email

6 oz Stilton with fruit, minced (seasonal holiday cheese)
equal volume breadcrumbs
4 oz Cambozola, Brillat Savarin or other soft ripened cheese
1 TBS butter
1 TBS fresh minced mint leaves
salt and white pepper
6 lamb loin chops
lemon pepper

Grate or thinly slice / crumble the flavored holiday Stilton of your choice. Add an equal volume of bread crumbs. Place the soft ripened 'brie-like' cheese and butter in a small bowl and melt gently in microwave. Slowly blend into cheese and crumbs along with mint, season to taste with salt and pepper.

Cut pockets into chops and stuff. Season with lemon pepper and grill or broil to taste, serving with fruit chutney, mint jelly, or a port reduction sauce if desired. - Chef Michaelangelo (mick) Rosacci

Lemon Pepper

4 tsp freshly ground Pepper Medley
4 tsp dried lemon zest, finely chopped
2 tsp Kosher salt
1 tsp sugar
1/2 tsp granulated garlic
1/2 tsp granulated onion
