Italian Cutlets w/ Cap Marinara Print Email


This is typical of a simple Italian meal that can be prepared in about 20 minutes. Like most authentic Italian cuisine, it depends on fresh flavorful ingredients.
4 veal cutlets
Dry bread crumbs
1 Box DeCecco Capellini (angel hair pasta)
1 large can Italian tomatoes (La Bella San Marzano is the best)
Garlic, olive oil, Italian herbs, salt and pepper
1 tossed salad
1 loaf Italian focaccia, ciabatta or other fresh Italian bread

Start water to boil and cook pasta according to directions on box. At the same time, season cutlets lightly with salt and pepper -- pack in bread crumbs and set aside.

In a small saucepan, sautˇ garlic in olive oil and add canned Italian tomatoes with juice, crushing tomatoes by hand. Heat and season to taste with Italian herbs, salt and pepper. Move to back burner and reduce heat to lowest setting.

Heat skillet and fry cutlets in olive oil to brown nicely. Serve pasta tossed in sauce with veal cutlet, salad and fresh bread on the side.
