Dutch Venison Sausage Print Email

3.5 lbs. venison
1.5 lbs smoked bacon
1/2-cup brown sugar
2 tsp. salt
1 tsp. garlic powder
1 tsp. onion powder
1/2 tsp. coriander
2 tsp. black pepper
1/4 tsp. allspice
1/4 tsp. nutmeg
1/4 tsp. cinnamon
1/4 tsp. savory
1/8 tsp. cumin
1/4 - 1/2 cup water or beer
hot sauce to taste

Grind meats into a bowl, grind twice for a more tender sausage. Blend spices into the water and mix into ground meats by hand. Fry up a small patty and taste adjusting seasonings if needed. Stuff lightly into casings if desired.
