Quick Game Meat Chili Print Email

2 TBS olive oil
1 onion, chopped
2 cloves of garlic
1 pound ground Bison or Venison
1 tsp fresh ground black pepper
salt and cumin to taste
1 small can diced green chilies, drained
one 16 oz can stewed tomatoes, drained & chopped
one 12 oz can V-8
1 small can tomato sauce
2 TBS favorite hot sauce

In a large kettle, saute onion in olive oil. Add garlic and ground meat. When the meat is browned, combine all other ingredients and let simmer, stirring every so often. Serve with shredded cheddar cheese on top and quartered tortillas for dipping.
