|Game Chops Fiorentino
Choose the finest venison chops, or bison steaks, whole slabs of back-strap, rack, tenderloin or sirloin.
Rub with olive oil and season with minced garlic, minced rosemary, oregano, sea salt and freshly cracked pepper. Sear for 2-3 minutes per side in a cast iron skillet to brown one side well.
Turn over and place pan in oven and cook at 350 degrees to 125-145 degrees internal temperature. Transfer to a cutting board, cover with foil or a clean towel and allow to rest for 5 minutes. Slice and drizzle with sweet balsamico. Serve over baby arugula, watercress or spinach drizzled with olive oil, balsamico, sprinkles of salt and pepper and curls of Parmigiano.
