Country Spinach w/ Bacon Print Email

2-3 oz sliced bacon or Italian pancetta
4 TBS minced shallots
4 TBS minced onion
1 pound spinach
salt and pepper to taste

Preheat a large wok or Dutch oven over medium high heat. Cut the sliced bacon into 3/4-inch pieces and mince the shallots. Add bacon and shallots to pan (with a drizzle of oil if needed) and cook until starting to brown.

Wash the spinach well and trim stems as needed. Drain spinach and add to pan, cover medium high heat to wilt spinach down until it's nice and tender 3-6 minutes. Season to taste with salt and pepper. Serves 3-4
