|Cucumber Onion Kim Chee
A great Hawaiian side dish with your steak, you can adjust the salt if you want a less briny bite.
1 cucumber, seeded and sliced
1/2 Maui onion, sliced lengthwise
1/2 tsp. sambal (Asian chili and garlic sauce)
1/2 tsp. ginger
1/2 tsp. garlic
1 TBS Asian Fish Sauce
2 TBS Kosher salt
1 TBS green onion, minced
Cut the onion and cucumber into bite sized pieces and sprinkle with the salt, allowing to marinate overnight. Stir in remaining ingredients and serve as an appetizer or with grilled meats.
