Mint Cucumber and Apple Salad Print Email

2 Cucumbers; Thinly Sliced
1 Tart Apple (I used a Granny Smith); Thinly Sliced
1/4 Fresh Mint; Finely chopped
1/4 cup Rice Wine Vinegar
2 tbs Good Quality Olive Oil
1/4 tsp Kosher Salt (or to taste)

Toss all ingredients together in a large bowl
Serve Immediately
