Grilled Balsamic Onions Print Email

Sweet onions, sliced 1/2 inch thick
Extra-Virgin olive oil
Sweet balsamic vinegar or sweetened reduction*
Sea salt and freshly ground pepper

Peel and slice sweet onions thick enough that they will hold together. Marinate in a combination of the remaining ingredients for 5 minutes to 12 hours (I use a plastic bag to conserve on Balsamico). Grill over medium-high coals, taking care when turning so they do not fall apart. Cook until tender and serve beside a great steak, dipping in juices.

*If you do not have a nice aged balsamic that is sweet and syrupy you can make a substitute by reducing a lesser balsamic and adding honey or brown sugar.
