Wild Mushroom Roast Print Email


This delicate method of cooking wild mushrooms captures their singular flavors and aromas.

Put a baking sheet in the oven and preheat it to 450 degrees. Enclose sliced mushrooms-a single variety or a combination-in a parchment paper package. Fold a length of paper in half, open the fold, and place the mushrooms on the top half of the sheet. Flavor the mushrooms with whatever you like, keeping in mind that they cook very quickly and that a simple treatment is best. Season with salt and pepper and perhaps a little shallot or fresh herbs, and moisten with a little butter or olive oil and a squeeze of lemon. Fold the bottom half of the paper up over the mushrooms. Beginning at one corner, make small overlapping folds around to the other corner; then twist tightly to seal the package closed.

Put the parchment packages on the baking sheet in the oven and bake for 5 minutes or so. The packages will puff up from the steam trapped inside. Serve immediately so that each diner will have the pleasure of opening a package and inhaling the escaping aromas.
