Sweet & Sour Spinach Print Email

1 1/2 lbs. Fresh spinach
2 oranges
1/2 red onion, thinly sliced
3 to 4 green onions, thinly sliced
2 Tbs. brown sugar
1/4 cup cider vinegar
1/2 tsp. each dry mustard, celery seed, and paprika
1/2 cup canola or olive oil

Wash spinach thoroughly, removing stems. Tear into bite-sized pieces and place in a large serving bowl, chill.

Peel oranges and cut into segments, reserving juice. Add to spinach along with onion slices.

In a small bowl, mix together sugar, vinegar, mustard, celery seed and paprika. Gradually whisk in oil. Pour half of dressing over salad, tossing to coat. Add more if needed. - HeathMark
