Caesar Salmon Burger Print Email


2 Tony’s Salmon Patties
- or two 4-6 oz. salmon filets, preferably tail pieces
olive or canola oil mist
Tony’s Caesar dressing, as needed
1 cup slivered or chopped romaine
1/2 ciabatta loaf; plain or garlic
2 large slices tomato

If using salmon patties, skip to next step. Marinate salmon fillets in ¼ cup Tony’s Caesar dressing for at least 20 minutes (2-4 hours preferred).

Heat a grill or stick free skillet with medium high heat. Brush or mist with oil and add patties or fillets, brown, turn and cook as desired. (Salmon fillet: start skin side up, finish skin side down, and then remove skin).

Meanwhile, sliver romaine lettuce as you would cole slaw and toss with Caesar dressing to taste. Cut two bun-sized pieces from loaf of ciabatta and split open. Brush the inside of each with Caesar dressing and toast in a pan, on the grill or under a broiler.

Variation: Also great with the salmon served over a Tony’s Caesar Salad, rustic bread on the side. Other great garnishes include olives, roasted peppers, artichoke hearts, capers and Dijon.
