|Rocky Ford Smoothie Float
3 cups Rocky Ford Melon cubes, cantaloupe or watermelon, ice cold
2 cup vanilla ice cream, separated
mint sprigs, optional
Cube melon and chill. Chill blender carafe. Combine melon and one cup of ice cream in chilled carafe and puree until smooth.
Transfer to chilled glasses, add a 1/2 cup scoops of ice cream and serve with a long spoon and garnished with a mint sprig.
