Easy Potato Salad Print Email

1 pound potatoes, boiled, peeled and diced
1/4 cup chopped raw onion
1/4 cup diced raw celery
1/4 cup diced cucumber
2 hard cooked eggs, chopped
1 tablespoon vinegar or lemon juice
1/2 cup mayonnaise
1/2 teaspoon salt
1/4 teaspoon pepper

1) Mix the vegetables and eggs. 2) Blend the vinegar or lemon juice into the mayonnaise. Mix with the salad. Cover. Chill. 3) Taste, add salt & pepper if needed.
