Bison Appetizer Meatballs Print Email

2 pounds ground Bison (buffalo)
2 eggs slightly beaten
1 cup shredded mozzarella cheese
1/2 cup dry bread crumbs
1/4 cup chopped onion
2 tbsp grated Parmesan cheese
1 tbsp ketchup
2 tsp Worcestershire sauce
1 tsp seasoning salt
1 tsp basil
1/2 tsp pepper

In a bowl, combine above ingredients. Shape into 1-in meatballs. Place on a rack in a shallow roasting pan and bake at 350° for 10-15 minutes. Remove the meatballs and rack.

2 cups ketchup
2 tbsp cornstarch
12 oz apple jelly
12 oz currant jelly
Combine ketchup and cornstarch in the roasting pan. Stir in jellies. Add the meatballs. Cover and bake 20-30 minutes. Yield: about 8 dozen.
