Pork Chops Smothered with Spiced Applesauce Print Email

6-8 pork chops, bone in or boneless, ¾ - 1 inch thick
Tony’s Rotisserie Chicken, Steak & Roast or Roasted Poultry seasonings, or your favorite seasoning blend – to taste
2-3 TBS olive oil

½ cup fresh pressed Apple Cider
1 tsp fresh ground cinnamon
4 each: whole cloves, whole allspice, or pinches of ground
4 each: Juniper berries (optional)
1/8 tsp Chinese Five Spice
pinches of crushed red pepper (optional)
pinches of nutmeg (optional)
2 cups (approx) Ela Family Farms Organic Apple Sauce – any variety

Season pork chops with one of the suggested seasonings. Heat a large stick free skillet over medium high heat, add olive oil and brown on both sides, cooking until just done – about 150 degrees internal – do not overcook! Remove to a plate, cover and reserve. Drain all but 1-2 TBS oil from the pan.

Meanwhile grind cinnamon and blend all the spices with the apple cider (bruising the allspice and juniper berries with the side of a knife). Carefully add cider to deglaze pan and reduce by half.

Add applesauce, stir well and simmer to marry flavors – about five minutes. Serve pork chops on a bed of, or smothered in, spiced applesauce. – Chef Michaelangelo (mick) Rosacci, www.TonysMarket.com -- www.TonyRosaccicatering.com

Notes: when using whole spices, pick them out of the sauce before serving to kids.
