Baby Spinach and Pear Salad Print Email

2 medium fistfuls of baby spinach leaves
1 pear
a nice tasty cheese, semi-soft is good
2-3 TBS sunflower seeds that you have toasted in a pan or skillet
10 mint leaves, finely chopped
2 tsp apple cider vinegar or some other mild vinegar
2-3 TBS extra-virgin olive oil

Slice the pear thinly or cut it into small pieces. Do the same with the cheese.

Whisk vinegar, salt, mint leaves and olive oil quickly together.

Mix spinach leaves, pear and cheese, add the dressing/vinaigrette and mix with a light hand.

Sprinkle with toasted sunflower seeds and serve immediately. 2 servings
