Green Bean Country Casserole Print Email

1.5 lbs Green beans
¼ cup Salt
2 cups Milk, 2%
1 tsp Onion powder
1/8 tsp Freshly ground black pepper
2 TBS Cornstarch
2 TBS Cold water
½ cup Gorgonzola cheese, crumbled
Breadcrumb topping, as needed

Snap stem ends off green beans and cut beans into 2-inch pieces.

Bring 1 gallon water with 1/4 cup salt to a boil and blanch green beans for 1 minute. Transfer beans to an ice bath and cool for 1 minute. Remove from ice and set aside in a large mixing bowl.

Bring milk to a simmer in a 2-quart saucepan with 1/2 teaspoon salt, onion powder and pepper. Combine cornstarch and water in a small bowl and add to mixture. Remove from heat when thickened.

Stir in gorgonzola and mix with green beans. Pour mixture into a 2-quart casserole dish and cover with breadcrumb topping. Bake for 45 minutes at 350 degrees F. Serves 6-8 - Chef-Co-owner Chris Prosperi, Metro Bis - Simsbury, Conn., USA
