Spicy Salmon Fillets with Fresh Herb Salsa Print Email

¼ tsp ground turmeric
¼ tsp ground paprika
¼ tsp dried oregano
¼ tsp cumin seeds
12 oz salmon fillet, skin removed
1 TBS olive oil

For the salsa:

2 TBS olive oil
1 TBS white wine vinegar
1 tsp Dijon mustard
one handful each of fresh cilantro, Italian parsley and basil leaves, finely chopped
¼ onion, finely chopped
¼ zucchini or cucumber, chopped

Preheat the oven to 400°

Mix the spices together in a small bowl or pestle & mortar, then transfer onto a plate and spread evenly. Press the salmon fillets into the spices to coat well on both sides.

Heat a ovenproof skillet over medium high heat, add one tablespoon of olive oil and sear the salmon briefly on one side until browned. Turn over and transfer pan to the oven and cook about five minutes longer - to taste. Transfer to a warm plate.

Meanwhile, whisk together the remaining olive oil, white wine vinegar and Dijon mustard in a small bowl until the mixture is thick and creamy. Add the chopped herbs, onion and zucchini or cucumber and mix well.

To serve, place the salmon in the centre of a serving plate and spoon the herb salsa around the edge. Serves 2
