Creamy Pasta and Smoked Salmon with Chives Print Email

14 oz Spaghetti
olive oil, as needed
1 small Red onion
2 Cloves of garlic
scant 1 cup (200 ml) Fresh cream
6 oz Nova Lox (smoked salmon), to taste
1 Bunch of chives
2 lemons
4 Tablespoons grated Parmesan cheese
Olive oil
Salt and pepper

Boil the spaghetti in boiling salted water until al dente following the instructions on the packet. As the pasta cooks peel and thinly slice the onion and garlic.

Meanwhile, sweat the garlic and onions with a drizzle of olive oil over medium heat for 3 minutes while stirring occasionally - do not brown.

Add the cream, bring to a light simmer and reduce by half - stirring regularly.

Add the salmon to the sauce. Strain the pasta and toss together with the sauce.

Add the thinly chopped chives, the juice of the lemons, grated parmesan, salt, pepper and a swig of olive oil before tossing together.

Serve immediately.
